La crostata con ripieno di crema pasticcera è uno dei dolci che amo di più e che racchiude nel suo gusto e nel suo profumo i migliori ricordi delle prime esperienze in cucina da bambina. La crostata è un dolce senza tempo che ho sempre avuto modo di preparare sia con la freschezza di una gustosissima crema pasticcera al limone o all’arancia sia con la gustosità delle marmellate fatte in casa da mia madre con le arance o con i fichi o con le albicocche. Oggi vi propongo una gustosa e friabile crostata con crema pasticcera e fragole di stagione a km 0.
Ingredienti per la pasta frolla (stampo da 30 cm)
230 gr di burro a temperatura ambiente
150 gr di zucchero a velo
380 gr di farina 00
3 tuorli
Scorza grattugiata di 1 limone
Ingredienti per la crema pasticcera
3 tuorli
200 gr di zucchero semolato
4 cucchiai di amido di mais
Mezzo litro di latte
Scorza di 1 limone (a piacere intera oppure grattugiata)
Ingredienti per guarnire
Fragole q.b. (o altra frutta a piacere)
Tortagel o Gelatina per dolci a piacere
Procedimento per la pasta frolla
Di solito preparo la pasta frolla a mano sulla spianatoia quando utilizzo il metodo sabbiato ma in questa ricetta invece ritengo che per ottenere un’ottima crostata sia più corretto utilizzare il metodo classico; infatti proprio per questo ho scelto di utilizzare la planetaria con la frusta a K.
Amalgamate il burro a temperatura ambiente con lo zucchero a velo fino ad ottenere un impasto consistente ed unite poi i tuorli uno alla volta fino ad ottenere una crema. Aggiungete la scorza grattugiata del limone e la farina setacciata e fate amalgamare fino ad ottenere un impasto compatto. Trasferite l’impasto su una spianatoia, formate una palla, avvolgetela con la pellicola per alimenti e riponetela in frigo per circa 45 minuti.
Nel frattempo potete preparare la crema pasticcera.
Trascorsi i 45 minuti togliete l’impasto dalla pellicola, lavoratelo rapidamente sulla spianatoia leggermente infarinata e stendetelo con un mattarello. Arrotolate l’impasto attorno al mattarello e posizionatelo sul fondo della tortiera lasciandolo sbordare in modo che premendo l’impasto sui bordi ondulati dello stampo si possa eliminare l’impasto in eccedenza.
Bucherellate il fondo della pasta frolla con i rebbi di una forchetta e adagiatevi sopra un pezzo di carta da forno circolare sul quale posizionerete dei fagioli per far sì che il calore del forno si distribuisca sulla base in modo uniforme. Questo tipo di cottura, definita cottura alla cieca, è ideale per le crostate che vanno farcite con un ripieno che non prevede cottura, come, in questo caso, la crema pasticcera.
Fate cuocere la pasta frolla per circa 30/40 minuti in forno statico preriscaldato a circa 180°.
Una volta che la crostata sarà cotta fatela raffreddare e successivamente distribuite sul fondo la crema pasticcera per poi disporre le fragole a raggiera sulla superficie. Per mantenere la lucidità della frutta è fondamentale distribuire la gelatina per dolci in tutta la superficie. Io ho utilizzato una bustina di Tortagel Paneangeli ma volendo potete anche preparare una gelatina in casa.
Tenete la crostata in frigorifero fino all’utilizzo.
Procedimento per la crema pasticcera
In un tegame lavorate bene i tuorli con lo zucchero utilizzando una frusta a mano fino creare una crema, dopodiché mettete il tegame sul piano cottura a bassa temperatura e versate gradatamente l’amido di mais ed il latte caldo (non bollente) mescolando continuamente con la frusta per far si che non si creino grumi. Aggiungete anche la scorza del limone e continuate a mescolare finché la crema raggiunge una consistenza densa, quindi spegnete il piano cottura e fate raffreddare.
Per evitare che sulla superficie della crema si crei una crosticina ricopritela con un pezzo di pellicola per alimenti per farla raffreddare per bene. Se avete utilizzato la scorza di limone in pezzi ricordate di toglierla prima di spalmare la crema sulla crostata.
